We tried the "White Pasta Sauce," from Michelle Lymon on page 170. In a nutshell it is the most fattening Fettucini Sauce known to man. It calls for One - 1 WHOLE QUART of Whipping Cream. I, of course, did enjoy it for the simple fact that it was fattening and had a whole medium onion. It was a little bland and needed more cheese in my personal opinion, which it does call for fresh parmesan in the notes. I missed that part when I made my grocery list and the bottled parmesan did not cut it.
Next we had the "Chicken with 40 cloves of Garlic" by Courtney Wallin. Now this is right up my alley for three reasons. I love a good crock pot recipe, easy prep with a great homemade meal at the end of the day. So I love love love garlic and the notes on this recipe say,"Squeeze roasted garlic out of skins onto toasted French Bread then spread with a knife" YUUUmmmeeeeeeee!
I cannot tell you what a pkg. of poultry herbs are. I was going to call Courtney to ask but honestly felt stupid for not knowing and some sprinkles of Poultry Seasoning worked just great. This was really good, although Rich and I both agreed that an un-roasted chicken looks like a dead grandma carcass!
Finally I made the "Teriyaki Lettuce Wraps," on page 146 also by Courtney Wallin. I made this as practice one night and then again on New Year's Eve. I had had this in the past and quite enjoyed it. It was one of those meals better prepared by others then myself. It was so just sooooo salty. When I had it in the past it was delicious and not so salty. So I think my preparation must have been a little off. It is otherwise so good, when prepared by others. Although, my kids scarfed it up and literally gave me thumbs up with out even asking what they thought. So two Logan and Rileigh thumbs up. They ate it gone and I had to prepare more for when Rich got home, which then I accidently used Soy Sauce instead of Teriyaki...oops! So his portion was extra, extra salty.
So now on to more recipe hunting in this fabulous cookbook. FYI there is not a low calorie nor a low-fat section so I'll have to see what I can pull off for the new year :)!




I have also made Michelle's sauce & loved it for the fat content. YUM! I agree with you, though, it could use a sharp cheese, maybe swiss? Something to give it some zip! I'm going to try the 40-clove garlic this week because it is actually a good low-fat option. Also, the lettuce wraps are a good healthy meal (without some of the sodium it sounds like....)
ReplyDeleteI'll look through the book & see if I can find any other good low-fat ideas. If not, you should just go ahead with the full fat recipes. If anyone can stand to gain ten pounds, its you! (And besides, I need someone to grow fat with! We can lose it next year.... hee hee...)
I also want to try the 40 garlic thing. It sounds awesome, have you seen the container of garlic Mandy has? I haven't had a chance to try much yet so I am lovin your reviews!
